Fudo Gendai Damascus Knife – Small Deba with VG10 Core and Ebony Handle

A Fusion of Perfect Aesthetics and Brutal Performance

This knife is based on the traditional Deba shape, which in Japanese gastronomy is primarily designed for filleting fish and butchering poultry. Thanks to its more compact size ("Small Deba" or Ko-Deba), this model is significantly more agile. It is a true all-rounder for finer work – from preparing fish and dicing meat to chopping herbs or garlic. The blade is extremely sharp, and thanks to a hardness of 60° Rockwell, it retains this edge for an incredibly long time.

The blade construction is a masterpiece. The cutting core is made of VG10 steel (so-called "Gold Steel"), which ranks among the absolute elite of cutlery steels. This core is protected on the sides by 33 layers of stainless Damascus steel. In total, the blade consists of 67 layers. This lamination process gives the knife not only a beautiful appearance reminiscent of rippled water but, above all, mechanical durability and flexibility.

The handle is crafted from genuine ebony wood. Ebony is an exceptionally hard, dense, and durable wood that resists moisture excellently. The shape of the handle follows the traditional Japanese "chestnut" profile (slightly angular on one side, rounded on the other), ensuring a firm and secure grip where the knife does not rotate in the palm. Caring for Your Damascus Jewel

This knife is a top-tier tool and requires appropriate handling. Never wash it in a dishwasher! Aggressive chemicals, high temperatures, and impacts against other utensils would irreversibly damage both the blade and the precious ebony handle. After use, rinse the knife with lukewarm water, wash gently, and dry immediately with a soft cloth. Although the steel is stainless, prolonged exposure to acids (lemon, tomatoes) without rinsing is not beneficial.

To maintain sharpness, I recommend using quality water whetstones. Avoid cheap pull-through sharpeners, which could chip the hard edge. Store the knife ideally in a knife block or on a magnetic strip, not loose in a drawer.
