A Fusion of Japanese Tradition and Modern Metallurgy

This knife isn't just a blunt tool for separating matter; it's the result of centuries-proven methods. The core of the blade is formed by Japanese VG10 steel (known as "Gold Steel"), hardened to a respectable 60-61 HRC. This guarantees that the edge stays phenomenally sharp for a long time. However, to prevent brittleness, the hard core is protected on the flanks by layers of stainless steel and nickel.

An unmistakable feature is the Tsuchime (hammered finish) on the upper part of the blade. These dimples, reminiscent of blacksmith hammer strikes, are not just for decoration. They create air pockets that prevent ingredients from sticking to the blade. With such a long knife, you will appreciate this doubly – slices of meat or vegetables will fall away from the blade on their own.

How to Care for This Gem

Damascus steel and natural materials require care. Never put the knife in the dishwasher! Aggressive salts and high temperatures would irrevocably damage the handle and dull the edge. After work, rinse the knife, dry it, and ideally store it in a knife block or on a magnetic strip so that the edge does not touch other metal objects.

Important Warning: Although the knife looks massive, its edge is ground to extreme thinness for maximum cutting performance. This knife is not a cleaver! Do not use it for chopping bones, frozen foods, or opening cans. Given the blade length of 25 cm, be careful when maneuvering in smaller spaces and be mindful of where the knife tip is pointing.
