Allow me to introduce a masterpiece tool that will transform your kitchen into a culinary sanctuary. The FUDO Prestige Luxury Sashimi Hocho Filleting Knife is not just an ordinary slicer; it is the result of centuries-tested traditions of Japanese swordsmithing applied to gastronomy. If you have ever admired the perfect cut on sushi or sashimi, know that the secret lies in just such a tool. The 190 mm (7.5 inch) blade is designed specifically for long, clean cuts without "sawing," which you will appreciate not only when preparing fish but also when slicing delicate meats for carpaccio. Luxury Damascus Sashimi Hocho Knife – FUDO Prestige 19 cm

Steel Legend

The heart of this knife is a core made of Japanese VG10 steel. This is currently the absolute pinnacle of knife steels, reaching a hardness of up to 60 HRC (Rockwell). Thanks to this, the edge retains its razor sharpness for an incredibly long time. To ensure the blade remains flexible and resistant to breaking, this hard core is clad on both sides with 33 layers of softer stainless steel. The result is a sandwich blade with a total of 67 layers, creating a breathtaking, unique Damascus steel pattern (known as Suminagashi) on the surface.

Ergonomics and Natural Materials

The handle is crafted from select bamboo wood. Bamboo is a material of the future—it is as hard as oak but much tougher and more resistant to moisture. The traditional Japanese "chestnut" shape of the handle ensures the knife fits your hand like a glove and won't rotate even in a wet palm. The overall design is highlighted by a stainless steel bolster and pommel (end cap), giving the knife perfect balance.

Caring for this Jewel

Treat this knife with the respect it deserves. To keep it in perfect condition:

  • Never put it in the dishwasher! Aggressive salts and heat would destroy both the edge and the wooden handle.
  • After use, rinse the knife immediately with hot water (and a little washing-up liquid) and dry immediately with a cloth. Do not let it air dry on a rack to prevent water spots from forming on the Damascus pattern.
  • Cut on a wooden or plastic board. Glass, ceramic, or stone boards would instantly dull the edge.
  • Store it in a knife block or on a magnetic strip, never loose in a drawer with other tools.

I recommend acquiring a high-quality whetstone (water stone) with a grit of 1000/3000 for this knife, so you can maintain its edge in a condition worthy of a samurai.
