The name Santoku means "three virtues" or "three uses" in Japanese. It refers to this knife's ability to excel at slicing meat, fish, and vegetables. Compared to a classic Western chef's knife, the Santoku has a flatter edge, making it the king of the "up and down" chopping motion rather than rocking. With a blade length of 150 mm (approx. 5.9 inches), this version ("Small Santoku") is extremely agile and suitable for:
- Dicing onions, herbs, and smaller vegetables.
- Portioning smaller cuts of boneless meat.

The blade is made using San Mai technology. Caring for Your Japanese Treasure
Damascus steel is a jewel that requires care. Never put the knife in the dishwasher! Aggressive chemicals and hot steam would destroy the handle and dull the edge. Rinse the knife with lukewarm water after use and dry it immediately. Although the steel is stainless, long-term exposure to moisture does not do it good.
Important Warning: The VG10 steel core is extremely hard and thin. The knife is not intended for chopping bones, frozen foods, or prying (e.g., opening cans). There is a risk of chipping the edge.
