The Power of a Samurai Sword in Your Kitchen

At the heart of this knife lies a cutting core made of Japanese VG10 steel, often nicknamed "Gold Steel". This steel is legendary in the knife world for its ability to achieve extreme sharpness and retain it for a very long time (hardness 60° Rockwell). To protect the hard and brittle core, it is clad on each side with 33 layers of stainless Damascus steel. The total of 67 layers creates a fascinating pattern on the blade (Suminagashi) reminiscent of rippling water. Thanks to this process, the blade is not only beautiful but also mechanically durable and flexible.

The handle is crafted from genuine ebony wood. Ebony is one of the hardest and most durable woods in the world, naturally repelling moisture and acquiring a beautiful patina over time. The handle shape is based on the traditional Japanese "chestnut" profile (D-shape), which fits perfectly in the hand and ensures the knife does not rotate in your palm even during forceful cutting. The luxurious look is complemented by stainless steel elements on the bolster and pommel.

Caring for Your Damascus Jewel

This knife is a masterpiece and requires care worthy of a samurai. Never wash it in a dishwasher! Aggressive detergents, high temperatures, and impacts against other items would irreversibly ruin both the edge and the precious wooden handle. After use, rinse the knife with lukewarm water (avoid harsh chemicals), dry immediately with a soft cloth, and store in a safe place, ideally in a knife block or on a magnetic strip. Do not leave the knife lying in the sink or in contact with acidic foods (lemon, tomatoes) for long periods without rinsing.

Although the Deba is a robust knife, avoid chopping through large marrow bones or frozen foods; that is a job for a cleaver. For sharpening, I recommend exclusively using high-quality water whetstones, which can restore the razor-sharp edge of the VG10 steel.
