In traditional Japanese knife terminology, it refers to a smaller version of the chef's knife (Gyuto), serving as a universal tool for finer, more detailed tasks where a large knife would feel clumsy. The slender point and slightly curved edge allow you to use both push and pull cutting techniques efficiently. The blade of this model features an aesthetically darkened and textured upper section—reminiscent of the traditional kurouchi blacksmith finish—which helps prevent food from sticking to the steel. The stamped authentic Japanese characters indicate the stainless material used. The hardwood handle is securely attached to the tang with two solid rivets, ensuring a comfortable grip and a long lifespan.

Proper Use and Essential Care
Although the blade is crafted from highly corrosion-resistant stainless steel, we recommend giving the knife proper care. To ensure it remains razor-sharp for as long as possible, under no circumstances should you wash it in the dishwasher. Harsh dishwasher detergents and high temperatures will irreversibly damage both the fine edge and the natural wooden handle. After each use, simply hand wash the knife in warm, soapy water and dry it immediately with a soft cloth. We also recommend occasionally treating the hardwood handle with a drop of food-safe oil (such as linseed or sunflower oil) to prevent it from drying out and to maintain its beauty. Remember that this is a lightweight and thin tool weighing only 100 g (3.53 oz). It is absolutely not intended for chopping bones, prying, or cutting deep-frozen foods, as this could cause the blade to chip or snap.
