A Fusion of Brute Strength and Delicate Beauty

Just like the smaller variants in this series, this giant hides within its core a cutting layer of Japanese VG10 steel ("Gold Steel"). This steel is hardened to 60° Rockwell, lending it phenomenal cutting properties and long-lasting sharpness. The core is protected by lamination – surrounded on each side by 33 layers of stainless Damascus steel. The resulting 67-layer blade boasts not only high mechanical resistance against breakage but also a beautiful pattern that is unique to every piece.

For such a large knife, the handle must provide maximum control. That is why genuine ebony wood was chosen, known for its extreme hardness and durability. The handle profile is based on the traditional Japanese "D" shape (chestnut shape). This ergonomic feature ensures that the knife fits firmly in your palm and won't rotate even during forceful cuts. The stainless steel bolster and pommel ideally balance the long blade so the knife doesn't feel unwieldy in the hand.

Care and Maintenance

This knife is an investment in quality and requires appropriate handling. Under no circumstances should it be put in a dishwasher! The combination of high temperatures, aggressive salts, and impacts would irreversibly destroy both the edge and the ebony handle. Rinse the knife with lukewarm water after every use, using mild detergent if necessary, and wipe it dry immediately. Store it in a safe place (knife block, magnetic strip) to prevent dulling against other objects.

Although the Deba is a robust knife, avoid chopping frozen foods or thick beef bones – that is a job for a cleaver. For sharpening, use exclusively high-quality water stones that can restore and polish the VG10 steel edge.
