Traditional Single Bevel Grind

What makes this knife exceptional is its geometry. The blade features a single bevel grind – one side is completely flat (or slightly concave), while the other side is beveled. This traditional Japanese grinding style ensures extreme sharpness and allows you to guide the cut cleanly along the bone without damaging the meat. The blade is made of quality Japanese stainless steel, which is resistant to corrosion and easy to maintain. Authenticity is highlighted by stamped Japanese characters on the blade.

Lightweight Wooden Handle

The handle is made in a traditional style from light natural wood (usually poplar or magnolia), which is lightweight and pleasant to the touch. The handle is attached to the blade using a black plastic ferrule, ensuring a firm connection and a classic look. Thanks to the lightweight handle, the knife's center of gravity is shifted more towards the blade, facilitating cutting.

Care and Maintenance

Although the blade is stainless, the knife requires gentle handling. Do not wash it in a dishwasher; high temperatures and chemicals would destroy the wooden handle and dull the edge. Rinse and dry the knife after use. Use only water stones for sharpening, and be mindful of the single bevel sharpening technique.

Safety Warning

This knife is very sharp. Even though it is called Deba (implying a cleaver), in the 105 mm size, it is not intended for chopping thick bones, but for precision work with smaller pieces of meat and fish.
