Two Grits for Comprehensive Care

Why buy two stones when you can have everything in one? This model is the ideal set for both beginners and advanced sharpeners.

  • Grit 600 (Blue Side): Use this coarser side for basic sharpening. It is ideal if the edge is visibly dull, has small nicks, or if you need to restore the basic geometry of the bevel. It removes material quickly and efficiently.
  • Grit 1000 (White Side): Serves for finer sharpening and smoothing out the scratches from coarser grinding. For regular maintenance of a knife that has only slightly lost its edge, using just this side is often sufficient. The result is a smooth and very sharp edge.

The Sharpening Ritual: How to Do It?

Sharpening on a water stone is a relaxing ritual with roots in Japanese history (Toishi). Before action, you must fully immerse the stone in water for 10 to 15 minutes until bubbles stop rising. The stone absorbs the water, which then serves as a lubricant. During sharpening, a paste forms on the surface (a mixture of water, abrasive, and steel), known as "slurry." Do not wash this paste off! It ensures the best sharpening effect. The stone sits in a non-slip rubber base, so it won't travel across your table while you work.

Care for Your Whetstone

This stone is a precision tool, not an ordinary river rock. It is fragile, so be careful not to drop it – it could crack. After use, rinse it and let it dry thoroughly in the air (never on a heater or in direct sunlight to prevent cracking). If the center of the stone becomes hollowed out over time (dished), it needs to be flattened against another coarser stone or sandpaper on a flat surface to make it perfectly level again.
