Sharpening Geometry: What Angle Will You Get?
This clamp is designed to keep the spine of the knife at a height of approx. 7 mm above the stone. However, the resulting sharpening angle varies depending on the width (height) of the blade:
- Ideal Blade Width (35–45 mm): On common kitchen knives (Santoku, smaller Chef's knives), you will achieve an angle of approximately 15° to 16°. This is the ideal angle for Japanese knives and modern slicing tasks.
- Wider Blades: If you use the guide on a wider knife, the angle will be sharper (below 15°).
- Narrower Blades: On narrow knives (e.g., boning knives), the angle will be more obtuse.
Usage and Limitations
The guide is ideal for beginners who want to build "muscle memory" for the correct tilt. It is suitable for knives with a spine thickness of up to 3.2 mm (0.12 in). Therefore, do not force it onto thick hunting knives.
