Fudo Damascus Sashimi Hocho Knife – 210 mm

33 Layers for the Perfect Cut

This knife belongs to the market leaders thanks to a blade made of 33 layers of stainless Damascus steel. The core is crafted from high-quality VG1 steel, hardened to 58 – 62 Rockwell (HRC). This extremely hard core is protected on both sides by 16 layers of softer Damascus steel, ensuring not only high cutting performance but also the necessary flexibility and stability of the blade.

Luxurious Design

The fine and precise grind of the blade allows for slicing ingredients into very thin sheets without damaging their structure – a key factor for preparing sashimi and sushi fillings. The handle features an elegant black design with metal accents. The knife is delivered in a luxurious wooden cassette with a sliding lid, making it a wonderful gift.

Care and Maintenance

Damascus steel is a jewel that requires care. Structural patterns and discolorations due to the manufacturing process may appear on the blade.

  • Cleaning: Wash the knife by hand in hot water with ordinary detergent. Remove dried residue with a nylon brush.
  • Drying: Do not let the knife air dry after washing; dry it immediately with a cloth to preserve its structure and sharpness.
  • Warning: Never wash the knife in a dishwasher! Doing so voids the manufacturer's warranty.
  • Polishing: Spots on the blade can be easily removed using a damp cloth and a polishing paste containing fine abrasives.
