Massive Blade and Durable Construction
The 180 mm long blade is made of hardened 420 stainless steel (hardness 52-54 HRC), which is low maintenance and resistant to corrosion. The significant height of the blade allows you to scoop up chopped ingredients like a spatula and transfer them straight into the pot. The handle consists of dark wooden scales secured to the full tang of the knife with three massive rivets, ensuring the handle will not come loose even during demanding chopping tasks.
Important Usage Warning
Although this cleaver is robust and heavy, its edge is ground fine for good cutting properties. Therefore, do not use it for chopping thick and hard bones (e.g., beef or pork marrow bones). There is a risk of chipping the edge. It is ideal for meat, cartilage, poultry, and hard vegetables.
