The Art of the Perfect Edge

In the world of knifemaking, sharpening generally ends at grit 1000. Everything beyond this point is honing and polishing. This stone offers you two phases of this process:

  • Grit 2000 (Darker Side): Serves as a bridge between sharpening and polishing. It removes microscopic scratches left by coarser stones and prepares the steel for the final shine. It is ideal for regular maintenance of knives that are still sharp but have lost their "bite."
  • Grit 5000 (Lighter Side): This is a tool for perfectionists. This side does not grind the steel but polishes it. The result is an edge as smooth as glass, offering minimal resistance during cutting. Ideal for sushi knives, filleting knives, or straight razors.

Usage and Maintenance

Working with this stone requires calm and precision. Before use, submerge the stone in water and let it soak (until bubbles stop rising). Keep the surface wet throughout the sharpening process. The paste that forms on the surface is not dirt but the abrasive medium – do not wash it off! This stone is not intended for repairing chipped edges or dull knives (use grits under 1000 for that), but for refining the edge to perfection.

Historical Insight

Japanese master polishers (Togi) spent weeks polishing samurai swords on stones of increasing fineness. They believed that the shine of the steel reflected the swordsman's soul. Stone Care

Fine stones are more susceptible to damage than coarse ones. Handle with care:

  • Protect the stone from drops; it is brittle and cracks easily.
  • Rinse after use and let it dry thoroughly in the air. Never dry it in direct sunlight or on a heater, as this could cause the structure to crack.
  • If the stone surface becomes uneven over time (dished), flatten it using a flattening stone or coarse sandpaper on a flat surface.
