Usage and Sharpening Technique

Japanese stones have an open-pore structure, meaning that new, sharp abrasive particles are constantly released during sharpening. For the stone to work correctly, you must use it exclusively with water (never with oil!).

How to use it:

  • Soaking: Submerge the stone in water for 10 to 15 minutes before use. You will know it's ready when bubbles stop rising from it. The stone needs to be fully saturated.
  • Sharpening: Splash water on the stone regularly while sharpening. A "slurry" or mud will form on the surface. Do not wash this away! This slurry ensures effective sharpening and polishing of the edge.
  • Sharpening a Knife Correctly
  • Purpose: The 1000 grit is used for primary sharpening. If your knife is dull (but not chipped or damaged), start directly with this stone. It will restore the blade's bite.

A Bit of History and Care

The Japanese tradition of sharpening stems from the care of Samurai swords (Katanas) and later fine kitchen knives for sushi preparation. Water stones are softer than Western oil stones, allowing for faster work and better feedback for the sharpener's hand.

Stone Care:

  • Rinse the stone after use and let it air dry (never in direct sunlight or freezing temperatures, as it might crack).
  • If the surface of the stone becomes dished (hollowed out) over time, it needs to be flattened using a flattening stone or coarse sandpaper on a flat surface.
  • Protect the stone from drops; it is brittle and can break.
