Japanese Damascus Fillet Knife Sashimi Hocho With VG10 Core

History And Perfection Of Japanese Steel

In the Far East, high-quality blades have been forged for over a thousand years. The original techniques that were once used to produce legendary samurai swords have, over time, transformed into the production of top-tier kitchen knives known as Hocho. The core of this knife is precisely manufactured from premium VG10 steel, which reaches an incredible hardness of 60 degrees on the Rockwell scale. Onto each side of this extremely hard core, 33 stabilising layers of Damascus steel are subsequently forged. This centuries-proven method ensures that the blade offers extraordinary cutting performance while maintaining the much-needed flexibility.

Practical Use And Safety

This specialist tool is primarily designed as a traditional filleting knife. Its long and narrow blade allows you to slice meat and fish in one continuous, fluid motion, thereby preventing the tearing of delicate muscle fibres. For safety reasons, we must strongly warn you: the blade is extremely sharp. Please exercise maximum caution when handling it to prevent any nasty injuries. Never use the knife for chopping hard bones, cutting frozen foods, or opening tin cans, as this could lead to irreversible chipping of the precious edge.

Care And Maintenance Of Your Knife

In order for this steel gem to serve you for as long as possible, it requires proper and loving care. Never put the knife in the dishwasher. Aggressive chemicals and high temperatures could fatally damage both the blade and the handle. After each use, simply rinse the knife with lukewarm water, use a mild detergent if necessary, and immediately dry it carefully with a soft cotton cloth. Although the handle made of modern G10 composite is extremely robust and perfectly hygienic, a gentle approach will guarantee that it retains its flawless appearance for many years to come.

We recommend that you also purchase a high-quality wooden chopping board and a set of Japanese whetstones alongside this exceptional knife, creating the perfect professional setup for your kitchen.
