History: The Art of Sabrage
The technique of opening champagne bottles with a saber, known as sabrage, has its roots in the Napoleonic Wars. It is said that Napoleon's light cavalry officers (Hussars) would open champagne bottles directly from horseback to celebrate victories. Since one hand held the reins, there was no time to uncork the bottle—they simply struck the neck off with their saber. This custom was adopted by the Don Cossacks and remains a pinnacle of sommelier skill today.
