This is a wide-range-use cutting assistant, a universal helper for your kitchen! We are proud to present a modern universal Japanese kitchen knife Kanetsu, made in traditional way in Japan. The blade is made of 33 layers of stainless Damascus steel. The core layer is made of VG 10 steel with Rockwell hardness of 60-61 degrees. On both sides it is protected by a layer of nickel and silver, additional 15 layers of Damascus steel are forged on both sides. This blade construction offers maximal cutting efficiency and good flexibility.
The perfect mirror finish, and a handle made of Pakka and Coccobolo wood, which is ergonomically designed in the classical chestnuts shape, fits perfectly in the palm. This kitchen knife is thanks to the long development and testing a real masterpiece! The surface structure as a tribute to the traditional forging techniques is machine-pressed.
The daggers are approximately made as follows. The basic shape of the blade is made by a laser CNC machine. It is burned from spring steel. The semi-finished blade follows then in the groove cutter, where the cutting edge and the groove are milled. The blade is then oil-quenched and tempered to the desired hardness. Then the guard and pommel is attached to the blade tang. The tang is usually peened at the end (behind the pommel) and the cross-guard hard soldered with brass. Hardwood plates are placed under the handle wrapping from genuine cowhide so that the handle is sufficiently robust for a safe grasp. The steels surfaces obtain the desired finish in the end - with a wire brush or with a felt disc with polishing paste.
